3 Ingredient Moon Pie Cookies

This little cookie is so delicious it will find it’s way into my rotation, a dinner bucket and my next cookbook. It has a couple of steps but it comes together rather quickly!

3 Ingredient Moon Pies

You don't have to wait for a blue moon or an eclipse to make these delicious and easy little cookies!

Ingredients

3 Ingredient Moon Pies
  • Graham Crackers ( I use Schar Gluten Free Graham Crackers
  • Marshmallow Cream
  • Dipping Chocolate

Instructions

  1. Preheat the oven to 350F (176C).
  2. Place Graham crackers on a cookie sheet and bake for 5 minutes. Remove from oven and quickly cut crackers into round circles.
  3. (Heating the Graham crackers will make them easier to cut with a small cookie cutter with a hole on top. See notes )
  4. Let cool completely.
  5. Using a knife scoop out some marshmallow cream and place on one cookie. Top with a second cookie.
  6. Place cookies on a plate and place in the freezer until completely frozen.
  7. Meanwhile, melt chocolates in a double boiler or according to the instructions on the package.
  8. Dip frozen cookies into the melted chocolate and place on a piece of parchment paper to firm up.
  9. Store in an airtight container.

Notes

Graham crackers can remain square if you don't have a cutter with a hole in the top. They will be impossible to remove from a cutter without a hole. I used the hole cutter for donut holes. (it was my grandmothers). Cookies need to be froze hard to keep the marshmallow cream from melting and seeping out. Cookies also need to be eaten the day they are made or the next day for optimum freshness.
