Ingredients
Pork Stir Fry
- 1 lb pork loin, sliced into thin strips
- 2 T oil, divided
- 1 (8 oz) box mushrooms, cleaned and sliced
- 2 green onions, chopped
- 1 can sliced water chestnuts, drained
Stir Fry Sauce
- 1/2 c chicken broth
- 1/3 c Coconut Aminos
- 2 T honey
- 2 T fresh ginger, finely minced or jarred sushi ginger, finely minced
- 2 tsp sesame oil
- 3 cloves garlic, finely minced
- 1 T cornstarch
Instructions
Pork Stir Fry
- Make the sauce first:
- Heat a skillet over medium heat.
- Add 1 T oil and pork. Saute until done. About 6-8 minutes. Remove pork to a plate.
- Add 1 T oil to the skillet and add mushrooms, green onions, water chestnuts, and the sauce.
- Stir vegetables and cook for several minutes until they are tender and the sauce is heated through.
- Add pork and stir to combine. Simmer for 5 - 10 minutes. Serve over white rice.
- Note: Substitute chicken, shrimp, thinly sliced pieces of beef or tofu. Coconut Aminos doesn't taste like coconuts. It is a safe substitute for soy sauce.
Sauce
- Add broth, Coconut Aminos, honey, ginger, sesame oil, garlic, and cornstarch to a jar with a lid. Shake to combine.
