Millionaire Pie

Once upon a time in a church basement a sweet lady brought this pie to a pot luck. I can neither confirm nor deny whether or not this pie actually made it to the dessert table. It has a tropical flavor that would have inspired Jimmy Buffet to write a song.

This pie lives up to its name! It's such a sweet treat that will grace your table beautifully!

Ingredients

  • 1 gluten free Graham cracker pie shell
  • 1 (14 oz) can sweetened condensed milk
  • ¼ c lemon juice
  • 1 (20 oz) can crushed pineapple, drained
  • 1 cup shredded coconut flakes, toasted, (reserve 1 T for garnish)
  • ½ cup maraschino cherries, drained and chopped (reserve 1 T for garnish)
  • 1½ cup pecans chopped, toasted (reserve 1 T for garnish)
  • 1 (8 oz) container frozen whipped topping, thawed

Instructions

  1. Drain pineapple in a fine mesh strainer before beginning, pushing as much juice from the pineapple as possible with the back of a spoon. Set aside.
  2. In a large mixing bowl, combine sweetened condensed milk and lemon juice and mix until completely combined.
  3. Add the crushed pineapple, shredded coconut, cherries and pecans to the bowl.
  4. Using a large spoon or spatula, fold in thawed whipped topping until completely combined.
  5. Once all of the ingredients are combined well. Pour the pie filling into the crust and refrigerate for several hours before serving.
  6. Garnish with toasted coconut, toasted chopped pecans and diced cherries.
