Millionaire Pie
Once upon a time in a church basement a sweet lady brought this pie to a pot luck. I can neither confirm nor deny whether or not this pie actually made it to the dessert table. It has a tropical flavor that would have inspired Jimmy Buffet to write a song.
Millionaire Pie
This pie lives up to its name! It's such a sweet treat that will grace your table beautifully!
Ingredients
- 1 gluten free Graham cracker pie shell
- 1 (14 oz) can sweetened condensed milk
- ¼ c lemon juice
- 1 (20 oz) can crushed pineapple, drained
- 1 cup shredded coconut flakes, toasted, (reserve 1 T for garnish)
- ½ cup maraschino cherries, drained and chopped (reserve 1 T for garnish)
- 1½ cup pecans chopped, toasted (reserve 1 T for garnish)
- 1 (8 oz) container frozen whipped topping, thawed
Instructions
- Drain pineapple in a fine mesh strainer before beginning, pushing as much juice from the pineapple as possible with the back of a spoon. Set aside.
- In a large mixing bowl, combine sweetened condensed milk and lemon juice and mix until completely combined.
- Add the crushed pineapple, shredded coconut, cherries and pecans to the bowl.
- Using a large spoon or spatula, fold in thawed whipped topping until completely combined.
- Once all of the ingredients are combined well. Pour the pie filling into the crust and refrigerate for several hours before serving.
- Garnish with toasted coconut, toasted chopped pecans and diced cherries.
