Refreshing Shrimp Salad
If we looked the word versatile up in the dictionary I am positive Shrimp Salad would be in the definition. It's excellent served in a lettuce cup as a fancy luncheon accoutrement, a croissant for a sandwich, a small Mason jar at a picnic or just on a chip while watching a ballgame. I guess you could say Shrimp Salad can wear many hats.
Refreshing Shrimp Salad
Light!! Refreshing!!! Flavorful!! This easy Shrimp Salad checks all of the boxes!
Ingredients
- 1 lb shrimp, cooked, peeled and deveined
- ½ red onion, chopped
- 1 T olive oil
- 1 avocado, diced into bite size pieces
- 1 bunch cilantro, chopped
- 1 large ripe tomato, slices and seeded
- 3 - 4 limes
- Salt and pepper to taste
Instructions
- Chop cooked shrimp into bite size pieces and place in a mixing bowl.
- Add red onion and the juice of 2 limes.
- Add diced avocado and the juice of 1 lime.
- Add chopped tomato and chopped cilantro and mix well.
- Add salt and pepper to taste. Taste for seasoning and add an extra lime if you like more zing!
- Cover and chill.
Notes
Serve as a salad in a lettuce cup (for fancy) or serve with chips for a delicious and refreshing dip.
