Stuffed Pork Tenderloin

Ingredients

  • 1 pkg pork tenderloin (1 pkg contains 2 tenderloins)
  • 2 (8 oz) blocks cream cheese, softened
  • 4 cloves of garlic, minced
  • 1 - 2 pinches of red pepper or white pepper, to taste
  • salt and pepper to taste

Instructions

  1. Remove the membrane from meat. Slice to make a boat, being careful not to slice through the ends or the bottom.
  2. Salt and pepper to taste
  3. Add garlic and peppers to cream cheese and stir to combine. Stuff the tenderloins with the cream sheese mixture.
  4. Place, uncovered, in a 350F (176C) oven.
  5. At 20 minutes use a meat thermometer to check the internal temperature. It is ready at 145F (62.7C). Return to the oven until it comes up to temperature.
  6. Remove from the oven and tent with tin foil for 10 minutes before serving.
  7. Alternative way to bake it. Cook on a smoker at 250F - 275F for 1 hour or until internal temp is at least 145F. Or cook it in your charcoal grill.
