Twice Baked Sweet Potatoes for Two

This recipe is a marrying together of a sweet potato casserole and a twice baked potato. It’s perfect for one to two people or double the recipe to feed several.

Twice Baked Sweet Potatoes

This side dish is the perfect marriage between sweet potato casserole and a twice baked potato.

Ingredients

  • Sweet potato
  • Pinch of salt
  • 2 tsp brown sugar, divided
  • 2 tsp butter, softened
  • 1 tsp cinnamon
  • Pinch of nutmeg
  • Orange zest (optional)
  • 1 T chopped pecans
  • Miniature marshmallows

Instructions

  1. Preheat the oven to 400°F (204°C).
  2. Wash the sweet potato well. Use a fork to pierce the skin to let out the steam. Place the sweet potato on a parchment paper lined baking sheet. Place in the oven. Bake until a knife easily goes all the way through it.
  3. Remove from oven and allow to cool to touch. Slice in half and carefully remove the flesh to make a 'boat". Place on a baking dish.
  4. Mix the flesh with 1 tsp brown sugar, butter, cinnamon, nutmeg, salt and orange zest. Fill each half with this mixture.
  5. Top each potato half with the remaining brown sugar and pecans or marshmallows...or both!
  6. Place under the broiler KEEP AN EYE ON IT!! It takes just minutes to brown the marshmallows and brown sugar.
  7. NOTE: Optional baking method. You can slice the raw sweet potato in half and place cut side down on a parchment paper covered baking sheet and bake until it is done.
