BBQ Pulled Pork Nachos
When life hands you extra BBQ pulled pork you make BBQ Nachos, of course! Whether it's just for one person or a crowd, you will want to fix this time and time again!
BBQ Nachos
This is a great way to repurpose leftover pulled pork whether it's just for one or for a crowd.
Ingredients
Memphis Style BBQ Rub
- 2/3 c chili powder
- 2 T sugar or sugar substitute
- 1 T Worcestershire powder *optional
- 1/4 c onion powder
- 1/4 c garlic powder
- 1 t cayenne pepper
- Salt to taste
Spicy Drizzle Sauce
- 1/4 c mayonnaise
- 1/4 c your favorite BBQ sauce
- Dash sriracha sauce or hot sauce of choice
- Pinch BBQ rub
Instructions
Other ingredients
- 1 bag of your favorite tortilla chips
- Pulled BBQ pork or chicken
- Shredded sharp cheddar cheese
- BBQ sauce of choice
- Jalapeno *optional for topping
- On a parchment paper lined, rimmed, baking sheet lay down a layer of chips. Top chips with meat and top with your desired amount of cheese. Bake in a 350F (176C) oven until cheese is melted and the meat is heated through. Top with your favorite BBQ sause, spicy drizzle sauce, sprinkle with extra Dry Rub and top with jalapenos, if desired
