Broccoli Raisin Salad

Here in the South, if we add at least two vegetables together with a little mayonnaise it magically becomes a salad! This is so delicious, one bite and you will be hooked!

Broccoli Raisin Salad

Here in the South anytime we add two vegetables together, with the addition of mayonnaise, we call it a salad! This is a staple on my menu list.

Ingredients

Salad
  • 2 large bunches of Broccoli, washed, cut into bite-size pieces
  • 1/2 red onion, cut fine
  • 1 c Raisins or dried fruit of choice
  • 4 strips of bacon cooked and crumbled
  • 1/2 c shredded cheddar cheese
  • Topping:
  • 1 c toasted nuts, toasted in 1 T butter (I use either sliced almonds or pecans)
  • Dressing:
  • 1 c mayonnaise
  • 1/2 c sugar. I used sugar substitute
  • 4 T apple cider vinegar

Instructions

  1. Add broccoli, red onions, bacon and cheese to a large salad bowl. Set aside.
  2. Toast nuts in the butter on top of the stove. Set aside.
  3. Combine the dressing ingredients in a bowl and allow to sit until the sugar is completely dissolved.
  4. Toss salad mixture with toasted nuts and dressing. Cover and store in the fridge until serving time.
