Cherry Crisp

The first time my husband and I took a bite of this we looked at each other and said “oh my word!” There wasn’t much said after that until we licked our plates clean. This has become one of our favorite desserts. It’s wonderful baked in the oven or in the smoker!

Ingredients

  • 1 (21 oz) can cherry pie filling
  • ½ tsp almond extract
  • 4-5 slices gluten free bread
  • 1 egg, beaten
  • 1 cup sugar
  • 1 stick butter, melted
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Put cherry pie filling into a pie plate (no pie crust) and sprinkle almond extract over the pie filling, mixing gently.
  3. Cut bread into small cubes (do not remove crust). Place the bread cubes evenly over the pie filling.
  4. Mix sugar, melted butter, beaten egg and vanilla extract. Pour over bread cubes, making sure every piece is saturated. Let stand for 5-10 minutes.
  5. Bake at 375°F (190°C) for 30-40 minutes or until golden brown.
  6. Note: Substitute blueberry pie filling and omit almond extract for a blueberry crisp. Substitute apple pie filling, add ¼ teaspoon of cinnamon and omit almond extract for an apple crisp.
