Copycat Red Beans and Sausage with Rice

While this isn't the traditional way to make Red Beans And Rice, this is a quick and easy meal that takes no time to fix and get it on the table!

Ingredients

  • 1 lb pkg Andouille sausage or polish type sausage of choice
  • 1 can (30 oz) red kidney beans, undrained
  • 4 T butter
  • 1 1\2 t white pepper
  • 1\4 t paprika
  • 1\4 t garlic powder

Instructions

  1. Slice sausage into slices, dice each slice into 4 pieces. In a heavy bottom pan over medium heat cook sausage until they start to brown. Remove to a paper towel lined plate. Into the same pan, pour beans and their liquid and cook on medium heat. Add white pepper, paprika, butter and garlic powder. As the beans are heating use the back of a spoon or potato masher to mash them to your desired consistency. Do not puree. Add cooked sausage and taste to adjust seasonings. Simmer until serving time. Serve with cooked rice

If you are fixing this as a gluten free dish please read the label of the sausage you are buying to make sure it doesn't contain gluten and MSG.

This is very similar to Popeye's Red Beans and Rice.
