Southern Cornbread

This delicious cornbread is perfect hot out of the oven with a pat of butter and a home cooked meal or crumbled into a glass of butter milk for supper. It makes the perfect pan of cornbread to use when fixing Southern Cornbread Dressing.

Ingredients

Batter
  • 1 c corn meal, NOT corn meal mix
  • 1 c gluten free flour
  • 4 T sugar ( to taste or optional)
  • 4 t baking powder
  • 1 1\ 2 tsp salt
  • 1 c buttermilk or whole milk, room temperature
  • 1 large egg, room temperature
  • 1/4 c vegetable oil

Directions
  1. Preheat the oven to 425F (218C). In a large bowl, combine cornmeal, gluten free flour, sugar, baking powder and salt. Add egg, milk and oil. Mix until fairly smooth, about one minute. Bake in a greased or sprayed 8" pan for 20 to 23 minutes or until a wooden pick is inserted and comes out clean. Turn out onto a serving plate.
