Old Settlers Beans or Lucy Beans
This is a complete meal in one dish! Our family calls these Lucy Beans after our son-in-law's mother who introduced them to us at a family gathering, they have since become a family favorite!
Old Settlers Beans (Lucy Beans)
This one dish meal is hearty and sticks to your bones. We call them Lucy Beans after our son-in-law's late mother.
Ingredients
- 1/2 pound thick cut bacon, chopped
- 1 medium onion, rough chopped
- 1 pound hamburger meat
- 1 (15oz) can red kidney beans, drained
- 1 (15oz) can pork and beans, undrained
- 1 (15oz) can lima or great northern beans, drained
- 1/4 c firmly packed brown sugar
- 1/4 c white sugar
- 1/4 c ketchup
- 1/4 c bbq sauce
- 2 T prepared mustard
- 2 T molasses
- 1/2 t chili pepper flakes
- Salt and pepper to taste.
Instructions
- Preheat oven to 350° (176C). Fry bacon in skillet until crisp. Remove bacon and saute onion in bacon grease. Remove onion from pan and drain. Brown beef and drain well. Add all ingredients and stir well. Turn into a lightly greased 9x13 baking dish and cover. Bake for 1 hour or until the middle is baked.
