Pineapple Casserole

It has been reported that Pineapple Casserole was President George Washington's favorite dish and for good reason! It's the perfect combo of sweet and savory. In this video I'm fixing a half a recipe but the written recipe is for the whole dish.

Pineapple Casserole

Rumor has it that this was President George Washington's favorite dish and with good reason. The balance of sweet and savory are perfect!

Ingredients

  • 2 (20 oz) cans of Pineapple Chunks, drained (keep 5 T juice)
  • 1 cup sugar
  • 5 T cornstarch
  • 5 T pineapple juice
  • 1 ½ cups of sharp cheese, grated
  • 1 stick butter
  • 32 Schar Entertainment Gluten Free Crackers, crushed (or Ritz if gluten isn't an issue)

Instructions

  1. Preheat the oven to 350F (176C).
  2. Place pineapple chunks in the bottom of a greased 9x13 casserole dish.
  3. Mix sugar, cornstarch and pineapple juice together. Add grated cheese and mixed together. Set aside.
  4. Melt butter and add crushed crackers. Mix with a fork until it is mixed well.
  5. Add about 1/2 cup of the butter crackers to the sugar mixture. Mix well. Sprinkle this over the chunks of pineapple. Take the remainder of the cracker mixture and sprinkle over the top of the casserole.
  6. Bake, uncovered, for 30 minutes. If you would like to have an 8x8 dish instead of a large casserole you can half the recipe.
