Southern Chicken and Dressing

Ingredients

  • 1 pan of cornbread, crumbled
  • 4 slices of gluten free bread, torn up
  • 1 c finely chopped onions
  • 1 c finely chopped celery
  • 2 c cooked chicken or duck breast (optional)
  • 4 t poultry seasoning
  • 1 stick of butter, melted
  • 4-5 c chicken broth
  • Salt and pepper to taste
  • 2 eggs, lightly beaten

Instructions

  1. Preheat the oven to 375F (190.5C).
  2. In a large mixing bowl add all ingredients EXCEPT eggs. Mix until thoroughly combined.
  3. Taste and adjust seasonings.
  4. Add eggs and mix well.
  5. Grease a straight sided large baking pan. Pour dressing into pan and bake covered for 45 minutes
  6. The eggs are done at an internal temperature of 165°F (73.8°C)
  7. Uncover and bake to your desired amount of brownness. KEEP AN EYE ON IT.
  8. It is completely done when the top is dull and has lost all of its shine.
