Pinto Beans in the Instant pot
Sometimes the body just needs some good old fashioned comfort food but that does not mean it has to be boring or laborious. Mother always seemingly had a perpetual pot of beans on the stove so velvety smooth beans will always remind me of home. Using the Instant Pot pressure cooker speeds this process up by leaps and bounds. Lately, I’ve taken to flavoring the cooking water I use to cook beans and peas in, it is a flavor game changer!
Pinto Beans in the Instant Pot
Sometimes a body just needs a pot of good ol pinto beans!
Ingredients
Flavoring the cooking water (optional)
- 4 c water
- several pieces of ham, chopped
- 1 T chopped onion, or to taste
Pinto Beans
- 1 # package dry pinto beans or dried beans of choice
- Flavored water plus extra water to cover beans
- Pinch of salt
Instructions
- To the bowl of the Instant Pot add water and favorings.
- Seal and cook on high for 30 minutes. Let naturally release 30 minutes.
- Sort beans to pick out any rocks or split beans.
- Wash in tap water until water runs clear.
- Put beans in the bowl of the Instant Pot with the water that has been flavored. Using extra water, cover beans until they submerged by a couple of inches.
- Place lid back on Instant Pot. Set it to seal. Set to cook on high for 50 minutes. Let naturally release for 20-30 minutes.
- Remove the lid and taste for salt addition.
