Rosemary Butter Shrimp over Cheesy Grits

Fresh rosemary adds such a wonderful flavor to these shrimp and cheesy grits.

Ingredients

Cheesy Grits
  • 2 c water
  • 2 c milk
  • 1-2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 c grits, not instant grits
  • 2 oz cream cheese
  • 1 c grated cheddar cheese
Shrimp
  • 1 stick butter
  • 1 clove garlic, minced
  • 4 - 5 rosemary stems
  • juice from 1/2 lemon or 2 t of lemon concentrate
  • 1 lb raw shrimp, deveined and shelled

Instructions

Prepare Grits
  1. In a sauce pan add water, milk, minced garlic and salt.
  2. Bring to a boil.
  3. Lower heat to medium-low, slowly stir in grits, cover and simmer until tender, about 20 minutes.
  4. Add cream cheese and cheddar cheese and stir until melted.
Prepare Shrimp
  1. Preheat oven to 375°F (190.5°C)
  2. Melt butter in skillet.
  3. Add minced garlic and rosemary and let simmer for several minutes.
  4. Layer in shrimp in a single layer.
  5. Bake in oven until the shrimp are done, about 10-15 minutes. Don't over cook.
