Strawberry Pizza

A friend's mother, my home room mother to be exact, made this over 40 years ago for a bridal shower. When I found a bag of gluten free pretzels I almost got a speeding ticket trying to get home to make a strawberry pizza! I was overjoyed, to say the least! I think you will be too after just one bite. The crunchy crust, the creamy middle layer and the bite from the strawberry topping marries so well into one of the most delightful summertime desserts you will ever run up on!

Strawberry Pizza

You would be hard pressed to find a summertime dessert equal to this delectable strawberry pizza!

Ingredients

Crust
  • 1 1/4 c pretzel crumbs (I used gluten free pretzels)
  • 3 T white sugar
  • 6 T melted butter
Cream Cheese Section
  • 1 (8 oz) package cream cheese, softened
  • 1/2 c powdered sugar
  • 1 t vanilla extract
Strawberry Glaze Layer
  • 2 cups sliced strawberries (this goes directly on the cream cheese layer)
  • 1 c white sugar
  • 1/4 c corn starch
  • 2 c crushed strawberries

Instructions

Crust
  1. Combine pretzel crumbs, sugar and melted butter.
  2. Press onto a greased pan and bake at 350°F (176°C) for 8 to 10 minutes. I let mine go for 13.
Cream Cheese Layer
  1. Combine and spread onto completely cooled crust.
Strawberry Topping
  1. Add 2 cups of sliced strawberries on top of cream cheese layer.
  2. Mix glaze ingredients together in a saucepan and bring to a boil, stirring constantly for 2 minutes or until thickened.
  3. Let cool slightly and spoon on top of strawberry layer.
  4. Place into the refrigerator for a couple of hours before slicing and serving

Notes

This is best served on the day its made.
