Tuna Patties

Around here on the farm you have to be ready to be a short order cook at the drop of the hat. A day that begins with “bring me a dinner bucket” turns into “I’ll be there in 20 minutes to eat”. When their knees are under the table they need something good and hot and filling. I need something good and quick to fix and this is the perfect main dish. Serve with your favorite dipping sauce….our favorite dipping sauce for this is catsup!

Tuna Fish Patties

This is the original fast food in these here parts. The men in my family are always happy to see this on the table.

Ingredients

  • 1 (12 oz) Tuna packed in oil, drained
  • 1 egg, beaten
  • 1\2 t lemon pepper
  • 1\4 t garlic powder
  • 1\8 t dill weed
  • 2 T gluten free Panko bread crumbs
  • oil for frying

Instructions

  1. Combine all ingredients in a mixing bowl except oil for frying.
  2. Add cooking oil of your choice about 1\2" deep in a heavy frying pan.
  3. Heat on medium to medium high heat. Oil is hot enough when you add a pinch of bread crumbs and it sizzles.
  4. Form patties and carefully add to the hot oil.
  5. Turn when the patties are golden brown.
  6. Drain on a wire rack or paper towel lined plate.
  7. Serve immediately.

Notes

Salmon or mackerel can be substituted for tuna fish.
