White Chicken Chili

This white chicken chili is so warm and comforting on these cold winter nights!

Ingredients

  • 2 c cooked chicken, shredded or cubed
  • 2 c chicken broth (2 c water & 1 T gluten free chicken bouillon)
  • 1 (8 oz) cream cheese, softened
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 ( 15 oz) can Navy beans
  • 1 (15.24 oz) can whole kernel corn or yellow hominy, drained
  • 1 (4.5 oz) can chopped green chili's, undrained
  • 1 tsp Tabasco sauce, or to taste
  • 1 tsp ground cumin, or to taste
  • 1 tsp chili powder, or to taste
  • 1 T gluten free cornstarch

Instructions

  1. Place all ingredients into a large Dutch oven. Cook over medium - low heat, (do not bring to a boil. The cream cheese will split) stirring occasionally until all ingredients are well combined.
  2. Lower to a simmer and cover.
  3. Simmer for 30 minutes before serving.
