White Chicken Chili
White Chicken Chili is a change of pace from the typical red chili we are all familiar with. Its creaminess comes from the cream cheese and it’s oh so good on these cold winter nights!!
White Chicken Chili
This white chicken chili is so warm and comforting on these cold winter nights!
Ingredients
- 2 c cooked chicken, shredded or cubed
- 2 c chicken broth (2 c water & 1 T gluten free chicken bouillon)
- 1 (8 oz) cream cheese, softened
- 1 (15 oz) can black beans, drained and rinsed
- 1 ( 15 oz) can Navy beans
- 1 (15.24 oz) can whole kernel corn or yellow hominy, drained
- 1 (4.5 oz) can chopped green chili's, undrained
- 1 tsp Tabasco sauce, or to taste
- 1 tsp ground cumin, or to taste
- 1 tsp chili powder, or to taste
- 1 T gluten free cornstarch
Instructions
- Place all ingredients into a large Dutch oven. Cook over medium - low heat, (do not bring to a boil. The cream cheese will split) stirring occasionally until all ingredients are well combined.
- Lower to a simmer and cover.
- Simmer for 30 minutes before serving.
