Individual Meatloaf Loaves
Here’s the thing about meatloaf, you either love it or you don’t. For most of my life I turned my nose up but BOY, had I missed the boat!! These little individual loaves are baked on a rack and aren’t swimming in grease like so many recipes.

Individual Meatlaf Loaves
This is my take on an old American classic.
Ingredients
Meatloaf
- 2 lbs ground beef
- 1/4 c oats or gluten free bread crumbs
- 1 med onion, finely chopped
- 1/2 c ketchup
- 1/4 c milk
- 2 large eggs, lightly beaten
- Salt and pepper to taste
Sauce
- 1/2 c ketchup
- 3 T brown sugar
- 2 t yellow mustard
- Splash Worcestershire sauce
Instructions
To Make the meatloaf
- Preheat the oven to 350F (176C)
- Place all ingredients into a large bowl. Mix until combined.
- Shape into small loaves, about a serving size. Place on a greased rack over a cookie sheet.
- Bake for 45 minutes or until the internal temperature is 165F (73.8C).
- Remove for oven and baste with meat loaf sauce.
- Return to the oven and bake 10 - 15 minutes until the sauce has caramelized.
- Serve with the remaining sauce.
To make the sauce
- Add all ingredients to a mixing bowl and stir to combine.
Notes
Ground venison or ground turkey can be substituted for beef. This is excellent cooked in a smoker. I have used left over loaves, crumbled up in chili and spaghetti with delicious results.
