Shrimp and Grits

Although Shrimp and Grits had humble beginnings it is anything but humble tasting!

Ingredients

Grits
  • 2 c water
  • 2 c milk
  • 1-2 clove garlic, minced
  • 1 tsp salt
  • 1/2 c grits, not instant grits
  • 2 oz cream cheese
  • ¾- 1 c grated cheddar cheese
Shrimp
  • 1# shrimp, raw, shelled and deveined
  • 1-2 T butter
  • 1-2 T oil
  • 1 tsp powdered Old bay, or to taste
  • 1 clove garlic, finely minced
  • Juice of ½ lemon
  • 3 T white wine or broth

Instructions

Grits
  1. In a sauce pan add water, milk, minced garlic, salt and bring to a boil.
  2. Lower heat to low, slowly stir in grits, cover and simmer until tender, about 20 minutes.
  3. Add cream cheese and cheddar cheese and stir until melted.
Shrimp
  1. In a saute pan over medium heat, melt butter and add oil.
  2. Add Old Bay and garlic.
  3. Add shrimp and sauté until pink and cooked throughout.
  4. Add white wine to deglaze the skillet.
  5. Shrimp can also be wrapped in foil and baked in a toaster oven for 6-7 minutes.
